This week our trainer focused on how to make Puff Pastry and Sweet pastry dough and the ways to incorporate that into many different recipes.
In the class our trainer demonstrated and walked through the steps to making their own perfect puff pastry dough in the quickest and simplest manner. The recipes covered both classical and modern pastries, using common, and some unusual, ingredients.
Pastry skills taught on this week’s class include:
- How to make Traditional puff-pastry
- Curry Puff (puff-pastry filled with a vegetarian filling)
- Sausage rolls
- How to make Sweet Pastry Dough
- Apple Tarte Tatin (Apple Pie)
- Almond Tart (filled with almond filling)
- Cheese Cake
While the lesson were going on, the trainer motivated the participants with inspiring stories to encourage them, while everyone shared their own experiences of failures and successes.
~Tips of the Day~
Don’t knead the sugar dough too much as the pastry will become hard and dry to eat. Less kneading is the best key to soft pastry.
